From luscious, layered lasagnas to perfectly crisp pizzas to creamy Tiramisu, many Italian dishes have two things in common: 1. They’re delicious, and 2. They’re traditionally full of dairy. And while it’s totally acceptable while dining out to order a bowl of spaghetti without the parmesan, at home, we’re able to get a little more creative and whip up some seriously creamy, comforting and even cheesy dairy-free Italian dishes.

Italy’s answer to the pita, this savory and satisfying flat bread made of chickpea flour is great as a snack or side dish. Try it topped with sautéed peppers or mushrooms, slathered with some Pesto à la Daiya, or as an accompaniment to a bowl of soup.

With its silky texture and mildly sweet flavor, puréed pumpkin is a natural fit for creamy comfort food. These stuffed shells offer a fun (and dairy-free) twist on a classic by adding some Daiya Mozzarella Style Shreds, fresh garlic and cashew “ricotta” to the mix – and don’t forget the accompanying Sage Cream Sauce!
