A delicious plant-based meal begins with fresh ingredients, and they don’t get any fresher than when they’re sourced from your local farmers market. This month you’ll start to notice vibrant stalks of purple asparagus begging you to bring them home. Don’t pass by these violet beauties. They are tender enough to be enjoyed raw and 20 percent sweeter than their green counterparts. Now let’s take out the guesswork of how to pick and use them!
Similar to green asparagus, the best produce will have stalks with dry, tight tips. Avoid limp or wilted stalks. When you get home you can refrigerate purple asparagus for up to four days storing them upright in a container with an inch of water.
Add vibrancy and a touch of sweetness to your favorite spring salads by adding them raw. Cut the stalks diagonally to make the green centers contrast with the purple exterior.
You can also start off your day by adding them during the last give minutes of cooking to your favorite chickpea frittata or tofu scramble.
Farmer’s markets are a fun way to shop for locally grown produce, so go out and enjoy food at its finest and freshest!
