Press tofu between paper towels or cloth for 30 minutes to remove excess moisture

Cut the block of tofu into 5-6 slices and then cut slices in half to make sticks
In a medium sized bowl combine gluten-free panko style breadcrumbs, extra virgin olive oil, Italian seasoning, paprika, salt and pepper in a bowl and set aside.
In a second bowl place aquafaba and set aside
In a third bowl place gluten free flour.
Create a breading station: line up the bowl of flour, the bowl of aquafaba, and the bowl of bread crumbs.
Taking one tofu finger at a time, toss into the flour first, then dip into the aquafaba and finally coat with the breadcrumb mixture
Repeat with all the tofu sticks, placing them on a lightly greased baking sheet in a single layer. Bake for about 30-40 minutes, flipping them halfway through baking.
Allow to cool slightly before serving with Hon'y Mustard Dressing and veggies of your choice.
