10 Ingredients, 3 Ways

Creativity in the kitchen doesn’t mean you have to have a stuffed pantry and loaded fridge. As few as 10 basic ingredients can unlock all-new flavors when they’re combined in different ways. Even the first meal of the day doesn’t have to be the same-old same-old. Who’s hungry for three hearty new ideas?

Cheezy Avocado Toast With Jalapeños

On a typical weekday morning, you’re probably flying out the door to get to work, school or the gym. The mantra in this situation is K.I.S.S.—keep it supremely simple. Slice and mash an avocado, spread on your favorite toasted bread, layer on your favorite Daiya cheeze—we opted for cuts of the Jalapeño Havarti Style Block— and top with jalapeños. You’re good to go. Seize the day!

Cheezy Potato Bowl

Now it’s time to load up on even more flavor and this time in a bowl. Boil 1-inch chunks of potatoes for six minutes (or throw in those leftover potatoes from dinner last night). Then top with sliced cherry tomatoes, avocado chunks, sliced button mushrooms and jalapeños. Top with our Cutting Board Cheddar Style Shreds, and voilà … you’re ready to power through the day.

Cheezy Breakfast Hash

Big day ahead? Guests in the house? This Cheezy Breakfast Hash is a big hit at any time. It preps in 15 minutes, and it cooks in 15 minutes. Let’s do it.

Ingredients

  •   2 medium potatoes, cubed into 1-inch pieces
  •   3 tablespoons extra virgin olive oil
  •   1/2 teaspoon ground cumin
  •   1 fresh jalapeño, chopped
  •   1 pint cherry tomatoes, halved
  •   1 can black beans
  •   2 teaspoon nutritional yeast
  •   1 cup fresh button mushrooms, sliced
  •   1 avocado
  •   1 handful fresh spinach
  •   2 slices Daiya Cheddar Style Slices
  •   2 slices Jalapeño Havarti Style Block
  •   Salt and pepper to taste
  •   1 lime, optional

Instructions

  • Boil potatoes in a pot of salted water and cook until tender, approximately 6 minutes. Drain and set aside.
  • Heat 2 tablespoons olive oil in a large pan. Add cumin and cook until fragrant, approximately 30 seconds.
  • Add potatoes and cook until golden. Transfer to a bowl and set aside.
  • Heat remaining oil and cook jalapeño, tomatoes, beans, mushrooms and nutritional yeast until tomatoes begin to break down.
  • Add potatoes and spinach to bean mix and cook until heated through. Season with salt and pepper as desired.
  • Top with Daiya slices and cook until melted. Garnish with avocado. Add a squeeze of lime (optional).
