You see zucchini in your local grocery store all year long, but now is the best time of the year to enjoy them. Zucchinis are exceptionally versatile fruits – yes that’s right fruit! They are often used in pasta sauces and sweetbreads. Now we want to show you how to choose the ideal zucchini and tell you how it can be the main ingredient in your next plant-based meal.
Bigger is not better when it comes to zucchinis. A zucchini that is longer than 8 inches will be more fibrous than the smaller ones. Check for firm stems and vibrant rich colored skin.
When you bring your zucchinis home don’t wash them until you are about to use them. Instead, put them in a plastic bag and store them in the vegetable drawer for no more than 4 to 5 days.
Pull out your mandolin or spiralizer and turn your zucchini into tasty noodles. After the noodles are made simply mix with your favorite sauce and enjoy hot or cold.
No mandolin? No problem! Try stuffing your zucchini with some of your favorite vegetables and rice then top it all off with some Daiya Shreds.
