Add a little fun and gooey-goodness to your usual veggie breakfast hash with Cheezy Shapes. Here, we shaped our Swiss and Cheddar Style Slices with some avocado like shooting stars, but you can make flowers, hearts or even "fried eggs". The fun is only limited by your own creativity!
Boil potatoes in a pot of salted water and cook until tender, approximately 6 minutes. Drain and set aside.
Heat 2 tbsp of oil in a large pan. Add cumin and cook until fragrant, approx 30 seconds.
Add potatoes and cook until golden. Transfer to a bowl and set aside.
Heat remaining oil and cook jalapeño, tomatoes, beans, mushrooms and nutritional yeast until tomatoes begin to break down.
Add potatoes and spinach to bean mix and cook until heated through. Season with salt and pepper as desired.
Top with Daiya Slices and cook until melted. Garnish with avocado and a squeeze of lime.
