Peel the potatoes and shred them using either a food processor with a shredding blade or a box grater. Using a cheesecloth or clean towel squeeze out all the excess water from the potatoes. Place the potatoes in a large bowl.
Shred the onion and add it to the potatoes. Add the potato starch, salt and baking powder. Mix well.
Pour a generous amount of oil in a large skillet over medium heat. Using a 1/4-cup measuring cup, place 4 portions of the potato mixture in the pan and cook until light golden brown. Flip the latkes and continue to cook until golden brown.
Place 1 slice of Daiya Cheddar Style Slices in between 2 latkes with the lighter sides facing outwards. Cook latkes until cheeze melts, flipping once so they do not burn and both sides are golden brown.
Serve with apple sauce and enjoy!
