Pre-heat oven to 425 F (220 C).
Lightly brush olive oil on both sides of flatbread and place on a baking sheet.
Arrange the smoked gouda style slices on the flatbread, placing them evenly and top with the apple slices.
Place the baking sheet in the oven on the middle tray and cook for 10-12 minutes until cheeze is melted and flatbread is golden brown.
Remove flatbread from the oven and top with arugula. Then generously drizzle the balsamic reduction over the flatbread.
