We’ve taken two salad favorites – Caesar and slaw – and created our own salad mashup! The radicchio and carrots are reminiscent of summers past while the kale, beets and the dairy-free Caesar dressing add an interesting new texture and flavor.
Peel and julienne radicchios and carrots and place in a large bowl.
Peel and julienne radicchios and carrots and add to the cabbage mixture.
Pour Ceasar dressing on top and mix until vegetables are coated.
Peel and julienne beet. Use as a topping for the slaw.
