Vegan Slow-Cooker French Onion Soup

This plant-based Vegan Slow-Cooker French Onion Soup takes just 15 minutes to prep and then simmers all day building flavor in a slow cooker. When you’re ready, just pour the soup into oven-safe bowls, top with Daiya Provolone Style Slices and bake in oven until cheeze is melted and bubbling.

Ingredients

  • 1 Package Daiya Provolone Style Slices
  • 2 Tbsp vegan margarine
  • 6 Sprigs fresh thyme
  • 1-2 Bay Leaves
  • 5-6 Large Sweet Onions
  • 2 Tbsp sugar
  • 6 Cups mushroom stock
  • 2 Tbsp red wine vinegar
  • 2 Tsp salt
  • 1 Tsp black pepper

Instructions

Place onions, vegan margarine, thyme and bay leaves into slow cooker

Cover and cook on high for 8 hours

Remove thyme and bay leaves

Add mushroom or vegetable broth, vinegar, salt and pepper

Cover and cook on high for 30 minutes

While cooking, preheat oven to 350 degrees

Pour soup into oven-safe bowls and top with Daiya cheese slices

Place soup in oven until the cheese is melted and bubbling
